Guys, June brings a lot of new exciting stuff to my blog! And I can’t wait to share it with you guys. New decisions, new job, new challenges, new travels, so much actually!
But for now, I’ll share this amazing recipe for the most delicious healthy muffins.
What do you need?
- 1 Large Banana
- 1 large egg
- 1/2 Cup of almond butter
- 2 Tablespoons of organic honey or any sweetener you like
- 2 teaspoons vanilla extract
- 1/4 teaspoon baking soda
- 1/4 teaspoon baking powder
- pinch salt
- 1 cup of frozen blueberries
Preheat oven to 400F. Spray the mini muffin tray very well with cooking spray and set aside. Mix all ingredients (besides blueberries)on a blender (I use my amazing Nutribullet). Using a tablespoon add one tablespoon of batter to each muffin pan cavity and 3 or 4 blueberries.
Bake for about 12 minutes & voila. Healthy, delicious muffin ready for any time of the day.
