#GreenMondays Recipes


Have you heard about #GreenMondays? No? Well.. ! (It’s a video – Don’t be lame – watch it!)

Bradyn and I decided to take part of this amazing initiative and it’s so great. We get to try new recipes and all. I’ve been researching a lot about plant based diets and vegetarian diets and I it’s been on my mind quite a lot. Participating on #greenmondays just make my transition better if I truly decide to change my full diet one day.

I leave you with one of my recipes:

 Sweet Potato & Lentils Curry

  • 1 small onion, chopped
  • 3 to 4 garlic cloves, finely minced
  • 2 tablespoon curry powder
  • 2 cups low-sodium vegetable broth
  • 1 Cup of lentils
  • 2 Chopped sweet potatoes
  • 1 Tsp of sea salt
  • 1 can of coconut milk

How to?

Place the onion in a large, shallow saucepan, and sauté over medium heat until translucent. Add garlic cloves and saute for a bit more. Add the curry and add the lentils and sweet potato.

Then, add vegetable broth, sea salt and coconut milk.

Let it cook for 3o minutes.

And then, voila!

(I served mine with brown rice.)
