Meatless Mondays – PASTA

It’s Monday! That means: No animal products. ūüôā

What do you need?

Tomato sauce: (Adapted from #Eatsmart Book)

1 TBSP olive oil

4 large tomatoes, chopped

1 Garlic clove chopped

1 TSP dried oregano

1/2 TSP Runny honey

1 Handful of basil fresh leaves

How to?

Fry the garlic in olive oil for 1, 2 minutes till’ golden. Add the rest of the ingredients¬†and cook over on a low heat for about 15 minutes, always stirring. Blend it all until smooth.

For the pasta?

What do you need?

1 TBSP of olive oil

1 Handful of zucchini noddles (Or as much as you want to eat)

1 A cup of chopped mushrooms


How to?

Cook the noodles in a pot with boiling water for about 4 minutes. Drain them very well after. In a pan add the olive oil and the mushrooms. Cook them until they became nice and gold. Add the noodles and cook it all for around 3 to 5 minutes. 8s4a3680

Add the tomato sauce to it and VOILA.
