Summer VIBES #2


Just like my first post of Summer Vibes, I am feeling the Sun in my face and I can’t stop smiling about it. Last time I gave you a breakfast recipe, and this time it’s lunch time!!!



what do you need?

  • 2 1/2 c. cooked quinoa
  • 4 eggs, beaten
  • 1/2 tsp Himalayan salt
  • 1/3 c. finely chopped chives
  • 1/3 c. finely chopped onion
  • 1/3 c. Parmesan cheese
  • 2/3 Gloves of garlic finely chopped
  • 1 c. of rye bread crumbs

(1 Table Spoon of Coconut Oil)


HOW to do it?


Combine 2 1/2 cups cooked quinoa, eggs, and salt in a medium bowl. Stir in the chives, onion, cheese, and garlic. Add the bread crumbs and let the mixture sit for 7 minutes.

Heat the coconut oil in a large skillet over medium-low heat. When hot, shape 12 1″-thick quinoa patties. They don’t have to be perfect. I’ve found the easiest way is to scoop 1/4 cup (use a measuring cup) of the mixture into wet hands, quickly press it into small patties, and slide it into the hot oil with a spatula.

Cover and cook for 4-6 minutes until the underside is golden brown, flip, and repeat until the other side is also a golden brown and the quinoa patty is firm (cooked in the middle).

what do you need?

  • 2 lb Sweet Potatoes
  • 2 tbsp Olive Oil
  • 1/8 tsp Salt
  • 1/8 tsp Pepper
  • 1/8 tsp Garlic Powder
  • 1/8 tsp Paprika
  • 2 lb Sweet Potatoes



HOW to do it?

Preheat oven to 450.

Line the baking sheet with parchment paper.

Cut sweet potatoes into 1/4″ fries.

Toss fries in olive oil to coat together with the spices. Spread fries out on prepared baking sheet.

Cook 20 minutes turning occasionally or until fries are browned.
