Ola bonitas e bonitos!
Hope you having a fantastic time! It’s almost Summer time here in Cape Town and I’ve decided to get you guys ready for it with a delicious Breakfast recipe!!!
Yes, once again… Coconut.
What do you need? (2 Pax)
1 Tin of Coconut Milk
2 or 3 Table Spoons of Chia Seeds
1 Teaspoon of Vanilla Extract
1 Handful of Blueberries
1 Frozen Banana
1 Tablespoon of Acai Powder
2 Tablespoons of Coconut Yogurt
Mix the tin of coconut milk and the vanilla extract together with the chia seeds in two different bowls and leave it in your fridge overnight.
In the morning grab your blender. Add the blueberries, banana, acai and yogurt and blend it very well.
Add the blended mix to the chia pudding the way you like it. (I always keep it to one side!)
… Now, you can top it up with whatever you want, but my favorite choices are:
