TACO NIGHT – Meatless Mondays

Today I am sharing a recipe from the book: The THUG Kitchen



What do you need?

– 1 Head Cauliflower

– 3/4 Beer

– 1/4 Cup vegetable broth

– 1 TBSP of Lime Juice

– 1 1/2 Tsp soy sauce

– 1 1/2 TBSP of chipole sauce

– 1 or 2 cloves of garlic sliced

– 1 1/2 Tsp chilli powder

– 1 Tsp smoked paprika

– 1/4 Tsp ground cumin

– 1/4 Tsp garlic powder

– Pintch of salt

– 1 TBSP of olive oil

– 1/2 yellow onion – chopped

– 6 corn tortillas

– 1 avocado sliced

HOW? – I am going to use the exact words from the book.

(Ok, I am not sharing ‘ugly’ words.)

1. Crank your oven to 400F. Grab a baking sheet.

2. Chop the cauliflower into small florets no bigger than a quarter. In a saucepan, warm the beer, broth, lime juice, soy sauce, hot sauce and garlic over medium heat. Add the cauliflower and simmer for about 1 1/2 minutes. Drain!

3. Toss the spices, salt, and olive oil together in a large bowl. Add the cauliflower and onion and stir’ til those (ugly word starting with a F) are coated. Dump it on the baking sheet and bake until browned, stirring half-way, about 20 minutes.

4. To make the tacos, warm the tortillas in the oven or microwave for a minute and then pile them high with cauliflower filling, slices of avocado, some of the slaw* and SALSAAAAA**.



What do you need?

1/2 Head of green cabbage

1 Small carrot

2 TBSP Lime juice

2 TBSP Rice vinegar

1 TSP Olive oil

1/8 Tsp Salt

1/3 Chopped cilantro


Cut the cabbage into the thinnest strips you can and make sure those pieces are no longer than 2 inches. Chop the carrot into matchsticks of the same length. In a small cup, mix together all the other ingredients.

Add the dressing right before you going to eat it. Sprinkle the cilantro on the end!
